Pearls, as a highly recognizable ingredient in milk tea, have become a favorite of countless people due to their chewy texture. Their main raw material is tapioca starch, which is kneaded with hot water to form round balls. The cooking process requires three steps: boiling, simmering and soaking, and cooling, so as to achieve that elastic and slightly chewy texture.
High-quality pearls have a bright color, presenting dark brown or black (due to seasoning with brown sugar or caramel). Their diameter is mostly 0.8-1.2 centimeters. When bitten into, they have a faint potato aroma and sweetness. In addition to the classic style, there are now matcha, cherry blossom, honey and other flavored pearls, adding diverse tastes to milk tea.
